Four yummy meal ideas to stretch leftovers from a lamb leg roast!

Life can get so busy sometimes! Think of it as self-care to do some meal or meat prep to have some easier delicious meals waiting for you at the end of long day.

For us, we love to cook up a nice lamb roast in the crock pot or by roasting it in the oven on a Sunday afternoon and then have it for those first few days of the week.  With just the two of us (Mark and I) and my Dad, we can usually have like two or three dinners, depending on the size of the roast.

For the first meal we usually have the roast meat just sliced and hot from the oven or crock pot and then pair it will an easy potato side, quick veggie like steamed peas, and then some simple greens salad. If you are roasting it in the oven, I often will add small potatoes to pan to be roasted along with the meat! (Ina Garten and the Food Network have a great lamb roast with potatoes recipe!!)

For follow up meals there are so many possibilities!

1.      Shred up some of the roast meat and heat and mix with your favorite BBQ sauce.  Serve on your favorite big bun with some coleslaw as topping (if you get a bag of pre-shredded cabbage coleslaw can be quick to make!).

2.      Shred up some roast meat and mix in with some sauteed onions and mushrooms and cook up your favorite noodles and combine all with homemade or a can of cream mushroom soup for an easy stroganoff meal.

3.      Cut up the leftover roast and warm up with a little water or broth and some Greek seasoning (Oregano, dill, parsley, garlic, pepper, etc. – or you can find a premixed blends).  Add some diced cucumbers, tomatoes, and onions. Stuff in a pita pocket (or favorite wrap) with some tzatziki sauce or dip for quick gyro-like sandwiches.

4.      We also will sometimes make a hardy vegetable soup with lamb meat. If you cooked the leg roast in a crock pot to begin with you can save some of the broth. Skim off the fat from the chilled broth. In a large pot make soup! Add broth (or water), some shredded lamb meat, dice carrots, potatoes, and then whatever veggies you have on hand. Kale, broccoli, beans, some tomatoes and a good dose of your favorite herbs and seasonings. It is a delicious and healthy way to use up some frozen vegetables or clean up some other leftovers in the fridge. We then usually freeze some soup for a later time when we need something quick to heat up.
